Okra red lentil soup | Gluten-free vegan recipe to try now!

 Comforting healthy delicious okra red lentil soup. Warm and great for the cold weather! It’s great cooked in a slow cooker or over the stove top. Yum!

One moment it was nice outside, around 60 degrees, next I woke to a snow storm!

While it was beautiful, white everywhere.  My daughter and I had a blast building a snowman. Hot cocoa wasn’t enough to keep us warm all weekend long. It wasn’t a sustainable solution to fill our empty stomachs. Although my little girl wouldn’t mind having a steamy cup of chocolates loaded with marshmallows all day. I swear It’s all she wants to go for!

Saturday night I decided to get us some slow-cooked soups to enjoy for lunch and dinner the next day. Something easy with minimal cleanup as I still have a ton of work to catch up on. ( There is no rest for the wicked…) okra red lentil soup

The discovery of a bag of frozen okra pleases me, I love okra. I try to include it in everything, sometimes successfully, sometimes not so much! Okra and potatoes is never a great idea! Trust me!

There is nothing more comforting than a nice bowl of soup in this cold weather. The body craves it!

It was nice eating as it is and over rice for a bulkier meal accompanied by a green salad for extra nutrition. ( doctor’s order, apparently I am not eating enough to sustain my iron needs) #thalessamia

Finally,

This okra red lentil soup will be great as meal-prep. It will do well stored in the fridge or in the freezer.

Ingredients

  • 2 cup red lentil uncooked
  • 2 cup frozen okra
  • 7 cup vegetable broth
  • 1/2 cup celery chopped
  • 1/2 cup onion chopped
  • 4 garlic cloves mashed
  • 1/2 tsp. cumin powder
  • 1 tsp. salt
  • 1/2 tsp. chili powder

Instructions

  • Add everything in a large pot, the lentil first.
  • Cook over medium-low heat.
  • Let simmer for 20-25 minutes or until the lentil a soft and the okra fully cooked.
