Refreshing Quinoa salad
This refreshing Quinoa salad is oh-so delicious! Great healthy fat content from the avocado, filling, hydrating, and easy!
I made a big batch of it the other night to last me for a few day as a mean for me not be starved. I tend to forget to eat when I am at home working on some exciting projects! I tend to keep pushing cooking out of the way until my only choice is some leftover burrito or a green smoothie!
I like the crunchiness and freshness of the cucumber and Romain lettuce! So delicious pair with the tartness of lemon juice. Lemon juice is all the dressing I use along with some herbs like oregano and crushed parsley.
How to?
To make this delicious vegan quinoa salad, you will need some canned black beans or pre-cook them. Some quinoa, of course. Greens, I usually go for romaine lettuce or arugula. Some cucumber I love using them the same day I pick them from my garden. They are so sweet and hydrating! You need to grab some parsley, oregano, tomatoes, red onions, lemon, and avocado.
Quinoa Salad
- 1 cup cooked quinoa, cooled
- 1 tablespoon of fresh parsley chopped
- 1 teaspoon dried oregano
- ½ cup black beans
- 3 cup chopped romaine lettuce
- 1 cup cubed cucumber
- ⅓ cup cherry tomatoes
- one small avocado, cubed
- 1 tablespoon lemon juice, freshly squeezed
- Mix the fresh ingredients together. Fold in the cooled quinoa
- follow by the black beans. Season with herbs, salt, and pepper.
- Serve with lemon juice.
