Sweet potato chocolate mousse with grilled peaches
Fluffy and smooth sweet potato chocolate mousse you absolutely have to try! It’s gluten-free, vegan, and easy to make!
Although available all year round, sweet potatoes usually are abundant in Fall. The sweet potato plant is one the easiest to grow and requires minimum maintenance. You don’t need big open spaces or many spaces at all to produce some of these delicious tubers. If you have sunlight and a decent sized bucket, then you are golden!
It takes 100 days or just over a month and a half for the plant to reach maturity. I am not exactly sure why I am telling you all this, but, the point is sweet potatoes are easy to grow and very accessible.
I sometimes find myself with more of them than expected, so I have come to collect quite a few sweet potato-based recipes.
In a week, I could grill them, baked them, steam them, fry them, etc. I also find that they are quite delicious as casseroles (sweet or salty), in slaws, salads, ice-cream, candies, soups, and of course, like in this recipe, pudding, porridge,or a fluffy mousse.
Regular potatoes are not the only ones having all the fun, you know!
A few ideas on how to use sweet potatoes
You absolutely must try sweet potatoes and cinnamon for breakfast! Boil them, sprinkle with cinnamon and top with berries or nuts! It’s such a healthy and delicious breakfast! It doesn’t require any fuss in the kitchen!
If you are sick of banana or allergic to them, replace bananas with boiled sweet potatoes could be a delicious alternative for smoothies, chocolate mousse, and baked goods. We even love sweet potato nice cream at my house! Same process as the banana ice cream but with the tubers.
Why would you want to add sweet potatoes to your diet?
They are affordable, easy to digest, and versatile!
They are packed with calcium, selenium, iron, vitamin C, vitamin B, and antioxidant beta-carotene.
It’s also great for your immune system as Vitamin A is an anti-inflammatory.
Lastly, it is recommended to add a little bit of fat with sweet potato when eating it to facilitate the absorption of the beta-carotene as it is a fat-soluble nutrient. Just a little bit of coconut oil, olive oil, or any oil of your choice.
Avocado and nuts could be great alternatives for those avoiding any sort of processed oils and fats all together!
Sweet potato chocolate mousse
- 1 large sweet potato
- 1/4 cup cacao powder
- 4 medjool dates pitted
- 1 tsp cinnamon powder
- 1 tsp vanilla extract or 1 vanilla bean scraped
- 1/2 tsp coconut oil
Boil the sweet potato until tender for about 15 to 20
Let it cool. Remove the skin.Add the sweet potato along with the rest of the ingredients in a blender or
food processor.Blend until smooth and fluffy.Serve immediately, or chill for a few minutes if you prefer it cold.Topped with your favorite topping orGrill some ripped pitted peaches to serve it with.
