I decided to make some muffins late last night! I got up and did! They were divine, moist, and definitely a bad idea for the waistline!

Ingredients

  • 1 and 1/2 cup spelt flour
  • 1/2 cup of maple syrup
  • 3 ripe banana
  • 1 teaspoon of salt
  • 1 teaspoon of almond extract
  • 1 teaspoon of cinnamon powder
  • 1 tablespoon of Apple cider vinegar
  • 1 teaspoon of baking powder
  • 1/2 baking soda
  • 1/3 cup of pecans
  • 1/4 cup of mini vegan chocolate chips
  • 2 tablespoon of vegetable oil
  • 1 teaspoon of flax seed
  • 1/3 cup of non-dairy milk.

Instructions

  • Heat the oven to 375 degrees.
  • In a large bowl, mix the flour, the baking soda and baking powder with the rest of the dry ingredients. Mix the non-dairy milk with the rest.
  • Combine the flour mixture with the milk mixture. Stir really well.Make sure there is no lump!
  • Pour in 6 to 8 medium muffin cups.
  • Bake for 28 minutes.
  • Enjoy!
