Let me tell you something, this vegan quiche is to die for!

One of my parents is coming over this year.  I am secretly hoping for my mom! It’ been almost 10 years since I saw her! ☹️ Let me tell you something they are both real foodies!

On one hand, my mother knows I can cook, in fact, she loves my cooking.  On the other hand, my dad thinks the only thing I can cook is pasta. Just because I can eat pasta every day doesn’t mean that is the only thing I can successfully cook!

I remember when I told him I was running a blog, he said yep girl, good luck with that!  I practically heard the sarcasm and his eye-roll through the phone!

Yeah, I know!  I had so many chances to dazzle him with my cooking skills, but I was way too busy getting my big brothers in trouble when he was around! Love you bros but payback is payback!

While I am working on the complicated logistics of their stay( visa, plane tickets, etc.…) I am also getting a list of all the vegan food I am going to make them. They all know that no meat will pass my kitchen door.

On top of the list is this fluffy, delicious vegetable quiche. I have tested this recipe several times and let me tell you it is AMAZING!vegan quiche

I am literally weeping with joy and pride!  It is that good!

What should you expect?

This vegan quiche will be such a great candidate for make-ahead meals aka meal prep. It stores well in the fridge up to a week and does ok in the freezer.

I tested with almond flour while it was ok I think chickpea flour yield better results. Chickpea blended with soy milk or any sort of non-dairy milk is great. It has this airy texture that is so egg-like.

Ingredients

  • 1 cup chickpea flour
  • 1 1/2 Tsp baking powder
  • 1 cup soy milk
  • 1 Tsp turmeric optional
  • 2 tbsp vegan cream cheese optional
  • 1 Tsp oregano
  • 1/2 Tsp sea salt
  • 1 Tsp vegetable oil
  • 2 Tbsp tamari or soy sauce or coconut amino
  • 1 small zucchini
  • 2 medium roasted bell pepper
  • 2 shallot
  • 2 garlic cloves
  • 1 cup vine tomatoes

Instructions

  • Pre-heat the oven to 375 degrees.
  • Wash all the vegetables.
  • Cut the bell peppers and zucchini into 1/2 in pieces.
  • Roughly chopped the shallot.
  • Chop the tomatoes,
  • On the stovetop warm up some water in a frying pan.
  • Use a garlic masher to process the garlic. Add it to the frying pan, followed by the shallot.
  • Let them cook until softened.
  • Add the tomatoes.
  • Season the with the tamari and oregano.
  • Reduce the heat. Let simmer for 5 minutes or until all liquid is absorbed.
  • Meanwhile, grease a pie pan with the vegetable oil set aside.
  • Add the soy milk, the chickpea flour, the cream cheese, the salt, and the turmeric in a food processor or blender.
  • Blend until smooth. Let sit until ready to use or for 10 minutes.
  • Transfer the vegetable mixture to the pie pan.
  • Gently pour the chickpea mixture over the vegetables.
  • Bake for 30- 35 minutes.
  • Let the vegan quiche cool before serving.
