Refreshing Quinoa salad
This refreshing Quinoa salad is oh-so delicious! Great healthy fat content from the avocado, filling, hydrating, and easy!

Servings: 2 serving
- 1 cup cooked quinoa cooled
- 1 tablespoon of fresh parsley chopped
- 1 teaspoon dried oregano
- 1/2 cup black beans
- 3 cup chopped romaine lettuce
- 1 cup cubed cucumber
- 1/3 cup cherry tomatoes
- one small avocado cubed
- 1 tablespoon lemon juice freshly squeezed
Mix the fresh ingredients together. Fold in the cooled quinoa
follow by the black beans. Season with herbs, salt, and pepper.
Serve with lemon juice.
