This refreshing Quinoa salad is oh-so delicious! Great healthy fat content from the avocado, filling, hydrating, and easy!

  • 1 cup cooked quinoa cooled
  • 1 tablespoon of fresh parsley chopped
  • 1 teaspoon dried oregano
  • 1/2 cup black beans
  • 3 cup chopped romaine lettuce
  • 1 cup cubed cucumber
  • 1/3 cup cherry tomatoes
  • one small avocado cubed
  • 1 tablespoon lemon juice freshly squeezed


  • Mix the fresh ingredients together. Fold in the cooled quinoa
  • follow by the black beans. Season with herbs, salt, and pepper.
  • Serve with lemon juice.
